Frittata’s one of my go-to breakfasts, whether I’m in the mood for something filling or sharing it with the whole family. There are plenty of times when plain eggs with a bit of salt just don’t do it for me, and an omelette ends up feeling a little too basic. So instead, I head to the pantry and grab whatever fillings I’m craving: cheese, veggies, meat, sometimes even leftovers. It all works.

Frittatas are usually a two-step deal: first on the stovetop, then into the oven to finish. But with this recipe, it’s way simpler. All you need is one appliance: the air fryer. Here’s how to make a Pepperoni Frittata the easy way.

This Air Fryer Pepperoni Frittata combines fluffy eggs, fresh spinach, cherry tomatoes, and bell peppers with gooey mozzarella and savory pepperoni slices.

Ingredients

  • 4 pieces 4 Large Eggs, whole

  • 1/4 cup 1/4 Fresh whole milk

  • 150 grams 150 cherry tomatoes

  • 1 1/2 tablespoon 1 1/2 unsalted butter, melted

  • 1 cup 1 fresh spinach, chopped and sautéed

  • 1/2 cup 1/2 Mozzarella cheese, shredded

  • 1 teaspoon 1 olive oil

  • 1 piece 1 green onion, chopped

  • 1 piece 1 medium bell pepper, chopped

  • 1 teaspoon 1 black pepper, or taste

  • 13-14 pieces 13-14 Pepperoni slices

  • 1 teaspoon 1 salt, or to taste (optional)

  • 2 tablespoons 2 fresh parsley, chopped

Directions

  • Slice cherry tomatoes in half.
  • Heat a pan or skillet over medium heat and add olive oil.
  • Toss in halved cherry tomatoes and cook for two minutes. Then, add the spinach and cook for two minutes while stirring. Set aside after.
  • Chop the vegetables and herbs: green onions, bell peppers, parsley and grate the mozzarella cheese.
  • In a large bowl, whisk together 4 large eggs, 1/4 cup whole milk, melted butter, and salt and black pepper.
  • Mix until it’s frothy, then stir in the veggies: 1 chopped green onions, 2 tablespoons, 1 cup sautéed spinach, and around 110 grams or 3/4 of halved cherry tomatoes. Stir gently so as not to tear the vegetables.
  • Preheat air fryer to 170°C or 340°F for three minutes, or according to your air fryer’s instructions.
  • Grab a silicone mold, cake pan, or any small dish that fits in your air fryer. Give it a quick spray of olive oil, then pour in the egg mixture. Make sure the veggies are spread out nicely. Once it’s in, give the sides a light tap to even things out. Top the custard with pepperoni slices.
  • Place it in the air fryer and set the timer for 18 minutes. You can test if it’s cooked by poking it with a knife or toothpick. If it comes out with a runny egg, you may have to cook it for a few more minutes.
  • When there are about 7 minutes left on the timer, carefully take out the basket and sprinkle the remaining cheese or toppings on top. Slide it back in to finish cooking.
  • Once cooked, transfer to a clean plate, garnish with chopped parsley, then serve!

This Pizza Frittata is an open canvas made with a handful of fresh ingredients. Here are the main ingredients that I used to make this dish.

  • Egg: Egg is naturally the star of this dish. With that in mind, please try to pick fresh whole eggs as they generally have the best flavor and quality.
  • Vegetable: You can choose any vegetable that you have, but I highly recommend cherry tomatoes, sauteed spinach, green onions, and bell pepper. You can also toss in some sauteed mushrooms, potatoes, zucchini, or broccoli.
  • Milk: I usually love adding milk to eggs for fluffiness and creaminess.
  • Pepperoni slice: Of course, don’t forget the pepperoni slices. This dish will resemble a Pizza Frittata, but without the pizza base or marinara sauce.
  • Mozzarella cheese: Sprinkle some freshly shredded Mozzarella cheese on top, which goes really well with the egg and pepperoni.
  • Seasonings: Don’t skip the seasonings! I used salt and black pepper in this recipe.

How to make Air Fryer Pepperoni Frittata

Ready to make your first Pepperoni Frittata made in the Air Fryer? Here’s everything you need to do.

  • First things first, prepare the ingredients! Wash the cherry tomatoes and the spinach under cold running water. Then, heat a pan or skillet over medium heat and drizzle some olive oil. Toss them in and sauté cherry tomatoes for 2 minutes, and add in the spinach and cook for another 2 minutes. Then, set aside.
  • Chop the rest of the vegetables and herbs. On a board, chop the green onions, bell peppers, and parsley.
  • Get a large bowl and whisk together 4 large eggs, 1/4 cup whole milk, melted butter, salt, and black pepper. Mix together until they become frothy, then it’s time to stir in the veggies. Chopped green onions, sauteed spinach, 3/4 of the halved cherry tomatoes. Stir gently with a spatula.
  • Preheat air fryer to 170°C or 340°F for three minutes, or according to your air fryer’s instructions.
  • When preparing Air Fryer Pepperoni Frittata, it’s best to cook it in a silicone mold, cake pan, or any baking dish that fits inside the air fryer. Although you can pour the mixture directly into the basket, using the ones I suggested makes removing and serving the frittata much easier. It also gives them a better structure.
  • Pour in the egg custard gently, making sure the veggies and other ingredients are spread out evenly. Do this slowly to avoid creating air bubbles. Use a spoon or spatula to lightly nudge the vegetables into place. Once everything is settled, tap the mold or dish gently on the side. After that, top the custard with pepperoni slices.
  • Place the mold, baking dish, or cake pan inside the air fryer and set the timer for 18 minutes. If this is your first time cooking, I recommend doing a quick test to check whether the frittata is cooked. Air fryer models vary, so the optimal cooking time for mine may be different from yours. You can test it by poking the frittata with a knife or toothpick. It’s cooked if no yellow liquid or runny egg appears on the surface.
  • When the timer shows 7 minutes remaining, pause the air fryer and sprinkle the mozzarella cheese evenly on top. Return the frittata to the air fryer to finish cooking.
  • Once cooked, transfer to a clean plate, garnish with chopped parsley, then serve!

Wanna perfect your Air Fryer Pepperoni Frittata?

  • Spread the veggies out evenly beforehand. Once the air fryer starts, there’s not much you can do, and whisking at that point isn’t ideal.
  • Only use full-cream milk, whole milk, or heavy cream. In my experience, these provide the creaminess I always crave, while low-cream or low-fat milk tends to make the dish a bit bland.

Note: Be sure to let them cool down first before storing them for the sake of your food and your refrigerator.

  • Air Fryer: Preheat the air fryer to 160°C or 320°F. Place the frittata slices in a single layer in the basket and reheat for 3–5 minutes, until warmed through.
  • Oven: Preheat the oven to 175°C or 350°F. Arrange the slices on a baking sheet, cover loosely with foil to prevent drying, and reheat for 8–10 minutes.
  • Microwave: Place a slice on a microwave-safe plate and cover with a damp paper towel. Heat on medium power for 60–90 seconds, until warmed.
  • Stovetop: Heat a nonstick skillet over low to medium heat. Add the slice and reheat for 3–4 minutes, flipping once, until warmed through.
