Ingredients
2 (15 ounce) cans — black beans, rinsed and drained
2 (10 ounce) cans — diced tomatoes and green chilies (such as Rotel), undrained
2 cups — water
1 (12 ounce) box — quinoa
1 (1.25 ounce) package — dry taco seasoning mix
Directions
- Combine black beans, diced tomatoes with green chilies, water, quinoa, and taco seasoning in a rice cooker.
- Seal and select Brown Rice setting according to manufacturer’s instructions; cook about 1 hour.
