Any dish made with bell peppers, no matter what they are, I either add it straight to my favorites or try to learn how to make it myself. Friends and family often catch me sneaking bell peppers into potato wedges or pizza because why not?

So imagine how thrilled I was when I realized I could just cut the top off and stuff them with anything I wanted.

For this recipe, I thought, why not add tuna instead of ground pork, beef, chicken, or turkey? Tuna is good for the heart and overall healththanks to its omega-3 fatty acids, it’s low in fat and calories, and packed with protein. On top of that, tuna is generally budget-friendly!

Ingredients

  • 2 pieces 2 Large bell pepper (any color)

  • 8 ounce 8 Canned Tuna, drained

  • 3/4 cup 3/4 Cream Cheese, softened

  • 1/4 cup 1/4 Carrots, diced

  • 1 tablespoon 1 fresh parsley, chopped

  • 2 tablespoons 2 green onions, chopped

  • 1 tablespoon 1 red onion, diced

  • 2 teaspoons 2 ground black pepper

  • 1 teaspoon 1 salt

  • 4 tablespoon 4 Mozzarella Cheese

Directions

  • Wash the bell peppers with cold running water, then pat dry with a towel.
  • Carefully and neatly cut off the top part of the bell pepper using a knife. Remove the white inner membranes and seeds inside. Check if the bell peppers can stand upright on their own without tipping over. If not, carefully trim the bottom just enough to help them stand making sure not to create a hole at the base.
  • Lightly salt the inner walls of the bell peppers. Let it sit and dry for at least 10 minutes.
  • Meanwhile, chop the veggies. On a chopping board, chop green onions, red onions, carrots, and parsley.
  • In a bowl, combine drained canned tuna, softened cream cheese, diced carrots, fresh parsley, green onions, red onions, black pepper, and salt. Mix thoroughly with a spatula or spoon until evenly combined.
  • Preheat the air fryer to 180°C or 360°F.
  • Transfer the bell peppers to a flat tray or plate, with the cut side facing up. Using a spoon, scoop the tuna and cream cheese mixture into the peppers. Press gently to ensure each pepper is filled without any empty spaces.
  • Place the peppers into the air fryer basket, making sure each one is standing upright. Spray with olive oil.
  • Set the timer for 12 minutes, and let the tuna-stuffed bell pepper cook.
  • Once the timer ends, remove the air fryer basket. Sprinkle a generous amount of mozzarella cheese and a pinch of pepper over the filling, then cook for another 5 minutes until the cheese is melty and bubbly.
