Ingredients

  • 1 pound — red potatoes, cut into 3/4-inch cubes

  • ¼ cup — mayonnaise

  • 2 tablespoons — apple cider vinegar

  • 2 sprigs — fresh dill, or to taste, chopped

  • undefined — salt and ground black pepper to taste

  • 4 — green onions, sliced

  • ½ — cucumber, peeled, seeded, and finely chopped

Directions

  • Place potatoes in a large pot and cover with salted water; bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 12 minutes. Drain; steam dry while preparing dressing.
  • Whisk mayonnaise, apple cider vinegar, dill, salt, and black pepper together in a large bowl; stir in green onions and cucumber.
  • Add warm potatoes to dressing; toss gently to coat. Cover bowl; refrigerate for at least 2 hours before serving.
