Ingredients

  • 2 pieces 2 russet potato

  • 1 teaspoon 1 garlic powder

  • 1 teaspoon 1 black pepper

  • 1/2 teaspoon 1/2 salt

  • 1 teaspoon 1 paprika

  • 1/4 cup 1/4 olive oil

  • 3/4 teaspoon 3/4 Italian seasoning

  • 1/2 tablespoon 1/2 rosemary

  • 1/2 tablespoon 1/2 parsley

Directions

  • Wash and scrub the potatoes thoroughly. Pat them dry with a paper towel. Leave the skins on for extra crispiness.
  • Place each potato between two chopsticks or wooden spoons to prevent cutting all the way through. Slice thinly (about ⅛ inch apart) across the top.
  • Brush the potatoes generously with olive oil. Season with salt and pepper. Make sure some of the oil seeps between the slices for even crisping.
  • Preheat the air fryer to 200C.
  • Cook for 20–25 minutes, brushing with more olive oil halfway through.
  • Serve warm as a side dish or snack. They pair perfectly with sour cream, cheese sauce, or ranch.

There are plenty of ways to cook and serve potatoes. Most common ones are the fries, potato bites, mojos, and there’s the Hasselback.

Hasselback potatoes are a Swedish-style baked potato known for their beautiful, fan-like appearance and crisp, golden edges. Each potato is thinly sliced almost all the way through, brushed with butter or oil, and roasted until the layers open up slightly.

Hasselback potatoes are often served as a side dish, usually during dinner or on special occasions. Their crisp, golden layers make them a standout choice for holidays like Christmas or Thanksgiving, but they’re just as perfect for a cozy weekend meal. They go well with almost anything, well, roasted chicken, steak, salmon, or even a hearty veggie main. No matter the occasion, they always add that little touch of comfort and elegance to the table.

Ingredients for the best Air Fryer Hasselback potatoes

  • Potatoes: The center of this recipe. For this hasselback potatoes, you can use any potatoes that you like as long as it won’t crumble as you cut them. It can be russett potato, or small ones such as potato marbles.
  • Seasonings: You’ll need a bunch of seasonings on this, depending on your preferences. You can go for a classic salt and pepper, or follow this recipe. In this recipe, I used a combination of salt, pepper, garlic powder and paprika.
  • Olive oil: The oil seeps between the thin cuts, coating each layer so they brown evenly and get that signature golden, crunchy texture.
  • Herbs: They infuse the potatoes with aromatic, earthy, or fresh notes that elevate the dish beyond plain roasted potatoes.

How to make Air Fryer hasselback potatoes

There’s plenty of things you can do in an Air Fryer and one of them is the Hasselback potatoes. Here’s how I made them.

Choose your potato: For hasselback potatoes, you can use any size that you prefer. You can even go for mini-hasselback potatoes if you want to. For a classic hasselback potato, we recommend keeping the skin especially if a crispy and crunchy exterior is what you’re after.

Clean the potatoes: Since we’d want to keep the skin, it’s better to scrub the outer part of the potato clean. Most grocery store potatoes only partially clean the potatoes, and those from wet markets tend to be covered in dirt, so the best course of action here is to get rid of the dirt before preparing and cooking these potatoes. Scrub the potatoes using your hands, a clean sponge or a vegetable brush

Cut the potatoes: Making hasselback potatoes mean you have to cut the potatoes almost all way through. It’s like making mojos but the pieces are still tied to the potatoes. So, to help you achieve this, and prevent yourself from completely cutting the potato in half, use a chopstick. Place the potato on a cutting board, and lay the chopsticks on either side of it. Chopstick will act as a stopper. Then, slice the potato into thin pieces. Continue around the potato until evenly sliced, leaving the bottom intact.

In a bowl, mix 1/4 cup olive oil, 1 teaspoon garlic powder, 1 teaspoon black pepper, 1/2 teaspoon salt, 1 teaspoon paprika, 1/2 tablespoon rosemary, 3/4 teaspoon italian seasoning.

Get a brush that you’ll use to apply and spread the mixture of oil, seasonings, and herbs. Ideally, use a heat-resistant brush, as you’ll also need it from time to time while the potatoes are in the air fryer. You can use silicone brushDip the brush into the mixture and apply it to the potatoes. Spread the pieces, fan them out, and brush the mixture between the slices.

Pre-heat the air fryer to 200 C or 400 F, or depending on your air fryer’s instruction.

Spray olive oil onto the inside of the air fryer basket and place the Hasselback potatoes inside, cut side up. Start the timer and let the potatoes cook for 20 minutes. Every five minutes, open the air fryer and use your brush to coat the outside and between the slices.

Now, how would you know if your hasselback potatoes are already done and cooked? Get a fork or a skewer and insert it into the thickest part of the potato. If it slides in without resistance, it should be ready to be served. Also, the edges of each slices should be crisp and golden brown.

Feel free to add more minutes if you think it needs more cooking.

Once it’s cooked, serve them on a plate and place cream and green onions on top! You can eat this
