Ingredients

  • 2 ½ cups — butternut squash, peeled and cut into 1/2-inch cubes

  • 1 tablespoon — olive oil

  • 1 tablespoon — unsalted butter

  • ⅓ cup — onion, finely chopped

  • 3 cloves — garlic, minced

  • — apple, peeled and chopped

  • 1 cup — chicken broth

  • ⅓ cup — milk

  • ⅓ cup — Italian cheese blend (Parmesan, Asiago, and Romano)

Directions

  • Place squash in a saucepan, cover with water, and bring to a boil. Simmer until very tender, 15 to 20 minutes. Drain. Cooked squash should equal 2 cups.
  • Heat oil and butter in a skillet over medium-low heat. Add onion, garlic, and apple. Stir frequently until softened and brown, about 15 minutes. Add butternut squash and chicken broth. Bring to a boil over medium heat. Reduce heat to a simmer. Add milk and cheese. Stir until cheese melts and sauce reaches desired thickness, 5 to 10 minutes. Season with salt and pepper.
