Ingredients

  • Chicken Cutlet
  • 2 pieces Chicken Cutlet

  • 1 cup Mayonnaise

  • 2 teaspoon Garlic Powder

  • 1 teaspoon Paprika

  • 1/2 teaspoon Salt

  • 1 teaspoon Ground Black Pepper

  • Parmesan-crusted Chicken Breast
  • 1/2 cup Panko breadcrumbs or japanese-style breadcrumbs

  • 1/2 cup Parmesan cheese, grated

  • 1 tablespoon Fresh thyme, chopped

  • 1/2 cup Mozzarella cheese, grated

  • 1 tablespoon Fresh parsley, chopped

Directions

  • Chicken preparation
  • The first big step is to make cutlets. When air frying cutlets, it’s best to keep them thin for even and faster cooking times. Get a knife, and cut them in half lengthwise.
  • Using a meat mallet or rolling pin, pound the chicken cutlet to about ½ inch thick. Flattening it ensures the breadcrumbs coat evenly and the chicken cooks uniformly.
  • In a bowl, stir together the mayonnaise, garlic powder, paprika, salt, and pepper until it’s all nicely blended.
  • Using a spoon, spatula, butter knife or clean hands, spread the mayonnaise mixture across the entire chicken cutlet surface.
  • Chicken Breast coating
  • In a separate bowl, combine panko breadcrumbs, Parmesan cheese, salt, pepper, and chopped thyme. If you don’t have thyme, you can use Parsley, Italian Seasoning and Oregano.

Pour 4 cups of water and 1/4 cup of salt, and submerge the chicken breast in it. Cover and refrigerate for at least 30 minutes.
  • Place the chicken breast in a ziplock bag or between two sheets of plastic wrap, and pound it thin with a meat mallet. The goal is to make it thin for faster cooking and to ensure each part cooks evenly.
  • Stir together the mayonnaise, garlic powder, paprika, salt, and pepper. This will serve as the first layer of coating. The mayonnaise will help with browning and will keep the meat moist and tender.
